BAKED LEMON CHICKEN WITH POTATOES & CARROTS

*8 to 10 potatoes, cut into wedges

*A whole chicken

*3 carrots , cut into slices

*3 tbsp olive oil

*1 tsp salt

*1/2 tbsp oregano

*1/2 tsp pepper

*1 tsp dried sage

*juice of 1 lemon

*1 tsp mustard

*1 cup beer

Place chicken and the potatoes into a deep roasting pan

In a mixing bowl whisk the olive oil, mustard and the lemon juice.

Pour over the chicken, potatoes and carrots.

Place the squeezed lemon halves in the chicken’s body cavity.
